server restarts

Server restarts tend to be early morning Est, there has never been an admin on at this time and if anything was to go wrong with a server it will be on a restart, I understand that doing this does not interfere with the mainstream population but I feel like its only 15 mins downtime at most and would benefit to be done when admins are active or at least someone who can resolve issues that arise?
