This is a game bug and has been reported to FacePunch. You can fix this for now by changing the brush type every time you edit a new sign.

The past couple of months our EU servers, particularity EU Pure, have encountered technical issues that eventually lead to an unplanned wipe. The issue was caused by data corruption and has since been addressed as well as several precaution to avoid this going forward. New Machine We've upgrade our EU's machine with the latest and greatest inside and out. This should also eliminate any network issues. Live Backups All EU servers are now equipped to commit daily backups regardless if they're running or not. Although a reason to have to revert to a backup is unlikely, rollbacks will be eliminated should something happen. Underlying Issue The issue was caused by one of our logging plugins exceeding the user's allocated file descriptors. The plugin in question has been rewritten in addition to all of the other precautions taken.
